Method

Fine strands of chilled chicken sit among crisp apple cubes, grated carrot and plump raisins. Lemon brightens the creamy mayonnaise dressing; add the shoestring potatoes at the last moment so they stay crisp.

  1. 1

Place the chicken breast in a saucepan of cold salted water. Bring to a gentle simmer and cook for 20–25 minutes, keeping the water from boiling hard. Drain, cool completely, then pull the meat into fine strands by hand.

  2. 2

Grate the carrot. Cut the apple into small, even dice, then finely chop the celery and half onion. Keep the pieces small so each forkful carries several textures.

  3. 3

In a large bowl, combine the cooled chicken, carrot, apple, celery, onion, drained corn, drained peas, raisins and parsley. Toss gently so the apple keeps its shape.

  4. 4

Fold in the mayonnaise and lemon juice with a spatula. Season with salt and pepper, mixing only until everything is coated and the ingredients remain intact.

  5. 5

Cover the bowl and refrigerate for at least 1 hour. Just before serving, fold in the shoestring potatoes briefly or scatter them over the top to keep them crisp.

Frequently asked questions

How do you get this dish right?
  • Let the chicken cool before shredding; warm meat breaks into dry strands and loosens the mayonnaise.
  • Drain the corn and peas thoroughly. Any excess water will thin the dressing as the salad chills.
  • Keep the shoestring potatoes separate until serving; moisture from the salad softens them quickly.
How long does this dish keep?

Refrigerate, tightly covered, for up to 2 days. Store the shoestring potatoes separately and add them just before serving. Do not freeze.
