  1. Vegetable prep

    Trim the green beans by hand, removing strings if necessary. Finely mince the garlic after removing the germ.

    Plunge the beans into a large pot of boiling salted water. Cook for about 7 to 8 minutes. They must remain crisp and bright green.

    Drain immediately and plunge the beans into ice-cold water to stop the cooking and set the chlorophyll.
