Instructions
0/4Vegetable prep
Trim the green beans by hand, removing strings if necessary. Finely mince the garlic after removing the germ.
10 minBlanch the beans
Plunge the beans into a large pot of boiling salted water. Cook for about 7 to 8 minutes. They must remain crisp and bright green.
8 minRefresh
Drain immediately and plunge the beans into ice-cold water to stop the cooking and set the chlorophyll.
2 minSauté in butter
In a sauté pan, let the butter foam. When it starts to smell nutty, toss in the beans and garlic. Sauté over high heat so the butter coats every bean.

Chef's tips
- •Never cover the pot while cooking, or the beans' acidity will be trapped and they will turn brown.
- •The garlic should only turn golden; if it browns, it becomes bitter and ruins the dish.
- •Ice water is essential to keep that 'flashy' restaurant-style green color.
Storage
Keep for 48h in the fridge. Reheat gently in a pan with a knob of butter to restore the shine.
