Plunge the beans into boiling salted water. They should be tender but not mushy. Drain immediately and rinse under cold water to set the green color.

Heat olive oil in a skillet. Sauté the onion and garlic without browning. Add the diced Serrano ham until the fat begins to melt.

Add the beans to the skillet. Sprinkle with paprika. Deglaze with a splash of white wine. Sauté over high heat so the sauce coats the beans perfectly. Season with pepper.

- •Don't over-salt the bean cooking water; the Serrano ham will provide plenty of salt at the end.
- •For a bit of crunch, brown the ham alone first, remove it, and then add it back just before serving.
Storage
