0/4Smoothing the yogurt
In a large container, whisk the Indian yogurt vigorously. The texture must become perfectly smooth, without any lumps, before adding the other elements.
2 minSeasoning
Stir in the white sugar and cardamom powder. Mix until the sugar is completely dissolved in the milky mixture.
1 minThinning and emulsion
Pour the cold mineral water in a thin stream while continuing to whisk. A fine foam should appear on top, a sign of good aeration.
2 minFinishing
Distribute the ice cubes into the glasses then pour the lassi. Coarsely crush the roasted pistachios and sprinkle them over the foam to add crunch.

- •Use a hand whisk for a finer froth than a blender.
