Instructions
0/4Crushing the cookies
Crush the cookies until they reach a fine, sandy texture. No large chunks should remain to ensure a smooth truffle consistency.
10 minBinding the mixture
Mix the fresh cheese into the crumbs. Work the mass with a spatula or by hand until the dough is supple, malleable, and no longer sticks to the bowl.
10 minShaping and chilling
Roll small walnut-sized balls between your palms. Place them on a tray and chill. The balls must be firm to the touch before coating.
40 minChocolate coating
Melt the dark chocolate in a bain-marie. Dip each cold ball into the melted chocolate, drain the excess, and place on parchment paper. The chocolate should set quickly upon contact with the cold centers.

Chef's tips
- •Use a fork to dip the balls, this allows excess chocolate to drain cleanly.
- •Do not skip the chilling step, otherwise your truffles will fall apart in the warm chocolate.
Storage
