  1. Crushing the cookies

    Crush the cookies until they reach a fine, sandy texture. No large chunks should remain to ensure a smooth truffle consistency.

    Mix the fresh cheese into the crumbs. Work the mass with a spatula or by hand until the dough is supple, malleable, and no longer sticks to the bowl.

    Roll small walnut-sized balls between your palms. Place them on a tray and chill. The balls must be firm to the touch before coating.
