Rinse the seeds in cold water using a fine mesh sieve. Drain them thoroughly. The surface should be just damp to ensure even toasting.
2 minDry toasting
Heat a pan over medium heat, without any fat. Pour in the seeds. Stir constantly with a spatula. As soon as the seeds start to pop and take on an even golden hue, the nutty aroma should fill the room.
5 minFinal seasoning
Off the heat, add the grey sea salt and sesame oil. Mix vigorously to coat every grain. Let cool on a cold tray to stop the cooking immediately.
