Preheat the oven to 180°C. Remove the brie from its packaging and place it in an oven-safe dish. Using a sharp knife, score the top crust in a diamond pattern without piercing the bottom.

Spread the crushed walnuts and cranberries over the top of the cheese. Drizzle generously with honey until everything is glossy. Sprinkle with thyme.

Bake for 15 minutes. The cheese should be puffed up and the edges slightly sagging. Serve immediately with warm toasted slices of country bread.
