Slice the country bread. Brush both sides with olive oil. Place under the oven grill until the center is golden and the edges are dry.

Cut the goat cheese log into even rounds. Slice the fresh figs into quarters or thick slices depending on their size.

Place a cheese round on each toast. Top with a fig slice. Bake for 2 minutes in a hot oven: the cheese should start to soften without completely running off.

Once out of the oven, drizzle honey over the canapés. Sprinkle with fresh thyme, a pinch of sea salt, and freshly ground black pepper.
