  1. Sear the fish

    Heat olive oil in a skillet. Place the cod fillets. Sear for 3 minutes without moving them to achieve a light coloring without breaking the flesh.

    Add the chopped onion and garlic. Pour in the dry white wine and fish stock. The liquid must boil immediately to release the cooking juices from the bottom of the pan.

    Reduce the liquid by half. Add the lemon juice, parsley, and capers. Whisk in the cold butter in pieces while shaking the skillet. The sauce should become opaque, glossy, and coat the spoon.
