Finely mince the garlic and chili. Cut the plums into small, even dice to help the fruit melt down during cooking.

In a heavy-bottomed saucepan, combine the plums, brown sugar, rice vinegar, garlic, chili, soy sauce, and spices. Add a splash of mineral water to start the cooking process.

Simmer over very low heat. The sauce must reduce until syrupy and reach a deep amber color. The fruit should mash easily with a fork.

Strain the preparation through a fine sieve or blend it to achieve a perfectly smooth and glossy texture. The sauce should coat the spoon without running off immediately.
