Prepare a mayonnaise by mixing the egg yolk and mustard, then gradually add the oil while whisking. Salt and pepper to taste. Split the baguettes in half, open them and spread with mayonnaise. Add the green salad and place two slices of cheddar per person.

In a hot pan, cook the steaks in a drizzle of oil. Salt and pepper. When cooked to your liking, divide them into three rough parts each.
