We measured the total time (preparation + cooking) of 3,200+ recipes classified by cuisine of origin. The ranking reveals which culinary traditions get you to the table the fastest—and what proportion of their recipes are ready in under 30 minutes.
Methodology — Stated times, 30-minute threshold
Preparation and cooking times are those stated in each recipe. Total time = preparation + cooking (excluding resting, marinating, and cooling). The "fast" percentage corresponds to recipes with a total time strictly under 30 minutes. Only cuisines with 15+ recipes are included to ensure minimum representativeness. Recipes without stated times are excluded from the calculation.

Key highlights
Southeast Asian cuisines in the lead
Stir-fries, express soups, and fresh salads: Thai, Vietnamese, and Japanese cuisines combine fast cooking techniques (high heat, fine chopping) with ready-to-use seasonings (soy sauce, fish sauce, curry paste).
Mediterranean: fast prep, slow cooking
Mediterranean cuisines (Greek, Lebanese) show short preparation times thanks to simple raw ingredients (vegetables, herbs, olive oil), but longer cooking times for stews and roasts.
French cuisine: the slowest on average
The tradition of stocks, sauces, braising, and pastries significantly extends the average time. However, French cuisine also includes express recipes (croque-monsieur, omelets, composed salads) that pull the average down.
The prep/cook ratio varies significantly
Cuisines based on sushi or ceviche have a high prep time but zero cooking. Braising cuisines (Mexican, Indian) have little prep but long cooking times. Total time alone doesn't tell the whole story.
