0/4Prepare the spice mix
In a bowl, mix the dried thyme, sesame seeds, sumac, and a pinch of grey sea salt. The herbs must be very dry to release their oils during cooking.
2 minBind with olive oil
Pour the extra virgin olive oil over the dry mix. Stir until you get a flexible paste that coats the back of a spoon without being too runny.
1 minGarnish the breads
Spread the mixture generously over each pita bread. Use the back of the spoon to press the zaatar into the crumb so it doesn't fall off during baking.
2 minBake in a hot oven
Bake at 200°C. Remove when the edges of the bread start to color and the oil begins to bubble on the surface. The bread should remain soft in the center.
