  1. Candying the beans

    Cook the mung beans and chickpeas in water until they mash easily. Add 50g of white sugar and reduce until a thick syrup coats the beans.

  2. Cooking the flan

    Mix the eggs with the sweetened condensed milk. Cook in a bain-marie until the flan is set but still jiggly in the center. Let cool and cut into cubes.

  3. Preparing fruits and rice

    Cut the mango and banana into small regular cubes. Dry roast the white rice in a pan until golden and crunchy.

  4. Crushing the ice

    Transform the frozen mineral water into very fine crushed ice, similar to snow. It should melt instantly in the mouth.

  5. Final assembly

    In a tall glass, layer the candied beans, fruits, nata de coco, ube halaya, and flan. Fill with crushed ice, pour the evaporated milk, top with a scoop of ube ice cream, and sprinkle with toasted rice.

Chef's tips

  • The ice must be shaved very finely, no large chunks that crunch under the teeth.
  • Mix the contents of the glass vigorously before eating so the milk and fruit fuse together.

Storage

Consume immediately. The ice melts quickly and the mixture loses its structure.
