Pit the dates by hand. They should remain whole but open. Toast the almonds in a dry pan until they color and release a toasted nutty aroma.

Melt the salted butter in a sauté pan. Let it foam and sizzle. When the foam subsides and a hazelnut scent escapes, it is ready.

Add the dates to the brown butter. Stir gently to coat them with fat. They should soften and become glossy without turning into a mash.
7 minBinding and finishing
Pour in the honey, cinnamon, and rose water. Add the almonds. Let reduce for a minute so the mixture coats the fruit. Finish with the sesame seeds.
