Toss the almonds and walnuts into a hot pan without fat. Stir until the nuts color and the roasted smell spreads.
5 minCutting the fruits
Cut the dates, apricots and dried figs into regular quarters. The pieces should be large enough to keep some texture.
10 minHoney infusion
Heat the honey with the cinnamon and lemon juice. As soon as it becomes fluid and starts to simmer, remove from heat.

Mix all the fruits in a bowl. Pour the hot honey over them and stir so that each piece shines. Let cool so the syrup coats well.
