Instructions
0/5Rice preparation
Rinse the white rice in cold water in a fine mesh strainer until the water runs perfectly clear. This removes surface starch to prevent the rice from sticking.
5 minSauté the aromatics
In a saucepan, heat the sunflower oil. Sauté the chopped yellow onion and garlic without browning. They should become translucent and release their fragrance.
5 minGlaze the rice
Pour the rice into the saucepan. Stir well to coat each grain with fat. The rice should become slightly translucent on the edges, like mother-of-pearl.
2 minAbsorption cooking
Pour in the mineral water and grey sea salt. Bring to a boil, then reduce heat to minimum. Cover tightly and cook for 15 minutes without ever lifting the lid. The rice is ready when small craters form on the surface.
15 minFinishing and flavoring
Off the heat, add the lime juice, lime zest, and chopped fresh cilantro. Gently fluff with a fork to avoid breaking the grains. The rice should be shiny and light.

Chef's tips
- •Never lift the lid during cooking; the steam is essential for tender grains.
- •For a richer flavor, replace the water with a light chicken broth.
Storage
Store in an airtight container in the fridge for up to 3 days. Reheat with a splash of water to restore fluffiness.
