  1. Activating the yeast

    In a bowl, dissolve the fresh yeast in lukewarm mineral water. Let it rest for 5 minutes until a light foam appears on the surface.

    Pour the wheat flour and grey sea salt into a large container. Gradually incorporate the water-yeast mixture while whisking vigorously. The batter should be smooth, elastic, and sticky.

    Cover with a damp cloth and let it rise in a warm place. The dough is ready when it has doubled in size and air bubbles are breaking the surface.
